– 200 g fresh nettle tips
– 1L hot water
– 2tbsp olive oil
– 1 clove of garlic
– 1 spring onion
– vegetable stock cube [does come in paper package]
– 2tsp honey
– salt
– black pepper
– ½ tbsp lemon juice
– fresh dill

First pour some boiling water over the nettles for 1 minute, this way they won’t sting you anymore. Drain and blend the nettles. Heat the olive oil in a large frying pan, add the garlic and spring onion till they get a golden colour. Now add the nettles and wilt them. Place back in the kettle, add water and a cube of vegetable stock. Season the soup. You can serve the soup with sour cream if you like but it’s good without it too, fresh and full of iron!
